
It's getting colder outside, the heating is on, the leaves have fallen and I don't know about you but I'm craving warming foods right now! These toffee nut oats are the perfect winter breakfast. They are filling, warming, protein packed and satisfy your sweet tooth!
Ingredients (serves 1)
(For oats)
40g oats
Handful walnuts finely chopped
Cinnamon to taste
150ml coconut or oat milk
1tbsp flax seeds
(For topping)
1 chopped apple
3 tbsp maple syrup
3/4 tsp coconut oil
splash water
1tbsp coconut yoghurt (I used Coconut Collaborative)
Method
• Place the oat ingredients in a pan and simmer on a medium heat until cooked
• For the topping- melt the coconut oil, add the maple syrup and water to the pan and heat until bubbling. Add the apples and cook for 5-10 minute until soft and golden brown.
• Add the oats to a bowl, top with the apples, the maple and coconut sauce from the pan and the yoghurt and devour!!
