Walnuts are so underrated! So often overshadowed by the almond but walnuts have amazing health benefits you may be missing out on by not eating them! Aswell as tasting delicious these so- called super nuts are packed with plant-based brain boosting Omega 3s, keep your skin and hair nourished and naturally boosts your energy- to name but a few!

In true Zoe form I couldn't help but create a recipe using these tasty little nuts (my challenge by California Walnuts was to use 5 ingredients and although these have a couple more there are 5 main ingredients!). These muffins are perfect for snacking on, are completely plant-based , refined sugar and flour free and tasty enough to eat on their own (straight from the oven is best!)


1 1/2 cups oat flour

4 ripe bananas

1/3 cup coconut sugar

1/3 cup peanut butter

approx 3 tbsp finely chopped walnuts

1 1/2 tsp baking powder

1/2 tsp bicarb of soda

pinch salt sea salt

1/2 tsp cinnamon


Mash the bananas in a bowl until no large lumps, add the coconut sugar and peanut butter. In a separate bowl combine the oat flour, baking soda & bicarb of soda, salt and cinnamon. Gently fold in the dry ingredients to the wet and when combined gradually add the chopped walnuts. Grease a muffin tin with coconut oil, carefully spoon in the mixture and level. Bake in the centre of the oven for approx 25-30 mins at 150 degrees (makes 6 large or about 1 mini muffins)

Enjoy on their own or topped with coconut yoghurt (they will keep for approx 5 days in an airtight container - mine lasted 2 as the kids fell in love and ate the lot!)
