DARK CHOCOLATE CHICKPEA BLONDIES

I love chickpeas but haven't really used them to bake with before. I had a couple of hours spare yesterday and decided to get crafty in the kitchen! I'm struggling for snack ideas lately and sometimes want that sweet and cakey treat without the sugar crash half an hour afterwards and these really hit the spot!

 

 

Ingredients

 

 

1 can chickpeas (drained and rinsed well)

100g peanut butter

50g coconut sugar

80g maple syrup 

10g Vitacoconuts coconut oil

2 dates

1tbsp plant milk of choice (I used oat)

2 tsp vanilla extract

1/2 tsp baking powder

1/4 tsp bicarbonate of soda

few squares dark chocolate 

 

Blend all ingredients together until smooth and pour into a lined or greased (with more coconut oil) baking tray and top with dark chocolate pieces. Bake at 150 for 20/25 minutes and enjoy!! Will keep in an airtight container in the fridge for approx 5 days or freeze and enjoy at your leisure!
