3 INGREDIENT PROTEIN PANCAKES

It's that time of year again!  I absolutely love pancakes and will happily eat them every week of the year but I thought I'd share my super easy super quick 3 ingredient protein pancakes that can be enjoyed by all and can be made with ingredients found in any household!

They are packed full of protein with no whey in site and can be topped and decorated in any way you like!  The more toppings the better in my opinion.  The pancakes have a strong banana flavour so if you want to change it a little try adding berries (blueberries are my favourite) or maybe chocolate chips!

 

Ingredients

 

1 ripe banana

2 large eggs

pinch baking powder

coconut oil (for frying)

 

Topping

 

Strawberries

Extra banana

Greek Yoghurt

 

Method

 

Mash the banana until there are no lumps and it has a creamy texture.  In a separate bowl whisk the eggs together and add a pinch of baking powder. Add the eggs and baking powder to the banana and combine together.

Heat a pan and add a little of coconut oil add 2 tablespoons of batter to the pan and cook until the pancake looks 'set' (not the pancakes won't bubble like regular pancakes).  Flip the pancake and cook the other side until set.  Set aside and repeat until all the mixture is used. Stack, add toppings as desired and devour!!!!
