I'm a huge snacker and I love having healthy snacks to hand that the whole family can enjoy that don't cost the earth. I love energy balls and bitesize bars but find them very expensive and more often than not full of nasties so I decided to create my own in a huge batch that you can freeze and enjoy whenever you like! And the best bit is they don't need baking and can literally be chucked together in a few minutes.
They contain maca powder and cacao powder for a natural energy boost and to create the chocolatey flavour.
Makes 20 balls
3 cups oats
6 tbsp date syrup
6 tbsp coconut and peanut butter (can sub for another nut butter of choice)
4 tbsp coconut oil
1 heaped tbsp cacao powder
1 heaped tbsp maca powder
Combine the oats, maca and cacao powder and set aside. Mash the bananas and add to a saucepan with the coconut oil, date syrup, nut butter. Gently heat and stir until the coconut oil has melted and the ingredients have combined (it may look a little lumpy but this is fine!) Add the oat mixture to the pan and combine with a spoon. Mould the mixture with your hands when it's cooled a little and make sure the oats are all mixed in. Roll into balls and set in the fridge.
Store the balls in an airtight box or pop in the freezer to enjoy later!
