Egg White Oats

I know!  Egg white oats doesn't sound too appealing right? And on paper it probably shouldn't be, but just trust me and read on and even try making them and then see why I called it that and why they are quite simply amazing!!!

 

So recently I'm cut meat out of my diet and swayed towards a more plant based diet (I know eggs aren't plant based, around 70-80% of my diet tends to be plant based but eggs and cheese hold a precious place in my heart so they make an appearance every now and again!)  

Since I'm not eating meat I'm even more aware of the need to make sure I get adequate protein in my diet so I try adding extra here and there in the form of eggs, egg whites and whey.  Queue egg white oats!!

 

Ingredients

 

40g Oats- I use Mornflake Superfast Oats
2 egg whites
150-200ml unsweetened almond milk (I use Alpro- but any nut based milk will suffice)
Splash flavoured syrup (I use Salted Caramel Skinny Syrup from TRKG Healthy Living)
1 medjool date chopped
3 strawberries sliced
1 tsp bee pollen
 

 

Method

 

Add oats, syrup and milk to a pan and cook on the hob for approx 2 minutes.  Add egg whites and cook for a further minute stirring continuously.  Transfer to bowl, add toppings and eat!

 

The egg whites not only add a protein hit but also make the oats super volumous and fluffy and even more filling,  I promise you can't taste them!!
